My daughter is GF, and there are GF matzahs around made from GF oats. The Israeli medical establishment, however, doesn’t recommend GF oats in general, because they have a protein in them that some people react to the same way (and they say that for Pesach, you should have the amount you need for the mitzvah and that’s it).
With that health consideration in mind, since my daughter’s still not bat-mitzvah and obligated in the mitzvot, we don’t yet get the GF oat matzah. Instead we get these “matzo-style crackers” - which are “fake” matzahs made from potato starch and tapioca starch and what have you. They’re actually very tasty (my other kids are always clamoring for them :).
I guess as she approaches bat mitzvah we’ll re-evaluate.
