My go-to menu these days:
1st course: Salads, dips, and chummus bassar. So delicious! It’s a plate of chummus with ground meat in the center. Let me know if you want the recipe!
2nd course: Chicken soup! Sometimes I also make a Roasted Garlic Zucchini soup, but usually chicken soup wins.
Main course: Chicken, rice, a veggie, a kugel, and apples. Lately I’ve been making roasted chicken over veggies (cherry tomatoes & mushrooms for example). For a veggie it’s usually string beans but very often broccoli or cauliflower. Kugel is potato kugel. And apples can be an apple kugel though I prefer a healthier version: just apples & cinnamon cooked in a pot!
Dessert is some sort of chocolate peanut butter pie, or a banana cake, or brownies. I usually make healthy breakfast-style cookies to eat in the morning and that’s dessert worthy too!
