3 Cups flour
2 TSP Baking soda
1/2 TSP salt
1/2 TSP Baking Powder
1 1/2 C. Sugar
4 grated carrots or zucchini
1/2 C oil
Optional Topping- 1/2 C dark brown sugar, 1/2 C Oats, 1/3 C flour, 1/4 C oil
Combine Flour, Cinnamon, baking soda and powder and salt.
Separately combine sugar oil eggs and carrots then add dry mixture.
Make topping by mixing with fingers and sprinkle on top of muffins.
Bake at 350’ for 25 minutes.
