The “Shehechiyanu” blessing is said when having seasonal fruits for the first time that season. It’s like saying, “We made it to this yummy opportunity again! Thanks, G-d!” Cool blessing.
The catch: if you can get the fruit year-round, you never end up having an opportunity to say the blessing. Downer.

I remember being shocked the first time I realized that even vegetables are seasonal in Israel. I walked into a supermarket, asked for turnip, and the produce guy gave me this “what are you talking about?” look. “It’s summer,” he told me. “Turnips are only in winter.”
But it happens to be really nice, this connection to seasonality. Fennel and turnip are our winter foods. It’s actually exciting when they come into the stores.
